We still recommended dishes Cooking and Bakery's School, Terra d'Escudella… For today: GOLDEN FILLETS WITH PEANUTS AND PINEAPPLE SAUCE, to enjoy this dish, We need the following ingredients:

• 300gr. golden
• 50 gr. carrot
• 50gr. leek
• 50gr. zucchini
• 100gr of pineapple
• 100gr of fried peeled peanuts.
• 1dl of olive oil
• 2 dl of white smoke
• 100g of basmati rice
• Laurel, thyme and garlic

Elaboration

Fillet the bream and save the bones and the head to make a short fish stock. We will use water, the green stem of the leek, a little carrot, laurel, thyme and fish bones for short broth.

Cut the vegetables into julienne strips and sauté them respecting their cooking time. Leek first, then the carrot and finally the zucchini and pineapple. Lower the heat and finish cooking the vegetables with a little broth. With the thermomix we crush the peanuts until they make a paste. We bind the vegetables with the peanuts and cook 5 more minutes.

With the leftover broth we will cook the basmati rice for 15 me. We will make the sea breams on the grill cooking them first on the skin side.

Once the GOLDEN FILLETS WITH PEANUTS AND PINEAPPLE SAUCE they are ready to serve, We must not forget the option of a good wine for an ideal pairing... For this dish we recommend four options of white wine…
